Creme Egg, Caramel Slices!



The recipe I used is based on this one: http://www.goodtoknow.co.uk/recipes/540382/salted-caramel-mini-egg-millionaires-shortbreads! Coming from a family of creme egg lovers, I exchanged the mini eggs in this recipe for them.

For the shortbread base you will need:
150g of unsalted butter (softened)
50g of caster sugar
160g of plain flour

For the caramel layer:
2 tins of Nestlé's Carnation Caramel

And, for the chocolate topping:
100g of milk chocolate
200g of dark chocolate
5 Cadbury's Creme Eggs (or as many as you want - go crazy, it's Easter!)

1) In a mixing bowl, beat the butter (softened) and sugar together. Add the flour slowly, stirring as you go. Tip the mixture into a baking tray making sure it's worked into the corners - I used a spoon dipped into boiling water to help me do this because it's super sticky! Prick with a fork all over and pop it into the oven for around 25 minutes (until golden brown on top). Once done, remove from the oven and leave to completely cool - I got impatient so popped it in the fridge.
2) To make the caramel - go into your local supermarket and buy 2 tins of Nestlé's Carnation Caramel...empty the contents on top of the cool shortbread base... Simples. Some may say I cheated, some may say I used my initiative. Making caramel from scratch is notoriously hard graft and for someone who has got zero arm strength like me, stirring the pan CONTINUOUSLY until it cooks just wouldn't be feasible. 3) Break all the milk and dark chocolate up into chunks and melt together. Pour the melted chocolate over the caramel and spread it across the entirety.
4) For the creme egg decoration, simply cut 5 creme eggs in half and place them on top of the chocolate.

Chill in the fridge for around two hours and then, using a sharp knife, cut into squares.

On a rainy Wednesday morning I drowned my sorrows in caramel. It was a good day! Nothing says Easter more than all the scrummy treats you can make once the Easter Bunny has done his rounds. When I was little, us kids (my two sisters, brother and I) would make zillions of rice krispie nests whilst my mum supervised, making sure no fights kicked off - only one bowl and four kids who all wanted to lick clean its chocolatey goodness never ended well! These caramel slices didn't even survive a day in my house before they were devoured (my dad even had one for breakfast alongside his granola and yoghurt - doing healthy eating the right way ;))! They may be a diabetics worst nightmare but my gosh they taste amazing and super easy to make too! They are definitely worth a try if you've got a heart that screams chocolate and a supportive group of friends/family that don't mind sharing them with you! ;)
